Prick skin, season and fry in LOW HEAT pan for 10-20 min. skin side down until fat has sweated out (breast should not sizzle but sweat), turn and fry for 3 min. and remove (at this point you can add a fruit topping and broil until crisp).

Legs
Rub legs with coarse salt the night before and rinse off before cooking. Roast at 250 F for 3 hours, remove lid and roast until crisp. Add seasonings, juice etc. if desired but duck fat will flavor meat nicely.

Whole
Prick skin with fork & season inside, Roast at 300 F for 3-5 hours until skin is crisp, season outside about 15 min. before removing from oven.
